Whole edamame, cooked in the pod, and soaked in a salty-spicy-sweet Asian-inspired marinade. This makes an excellent, can’t-stop-eating-these snack or appetizer. Have napkins on hand; the marinade gets all over your fingers.
1 lb. cooked edamame (in pod)
Juice and zest of one large orange
¼ c. tamari or shoyu soy sauce
2 T. toasted sesame oil
1-2 T fresh ginger, minced
1 large whole garlic clove, peeled and crushed
Hot pepper flakes to taste
Sugar to taste (optional—you want to go with a sweet/salty/spicy combination)
Combine all marinade ingredients and toss to coat the edamame. Enjoy. The end.
(Edamame will keep in the fridge for a week or so.)
